Pasta with Celery & Hazelnut Pesto

Pasta with Celery & Hazelnut Pesto: a creamy pasta dish that makes the most of every part of the celery. Both the stalks and leaves are blended with toasted hazelnuts and cheese to create a rich, velvety pesto, while Mioorto Chives add a delicate, savoury finish that enhances the natural sweetness of the vegetables.

Ingredients

Pasta
Celery
Toasted hazelnuts
Parmesan or Pecorino cheese
Mioorto Chives
Extra virgin olive oil
Salt and black pepper, to taste

Procedure

Wash the celery and blend both the stalks and leaves with the toasted hazelnuts, cheese, salt, and a drizzle of extra virgin olive oil until smooth. Add a little cold water as needed to achieve a creamy consistency while keeping the pesto bright green.
Cook the pasta in salted boiling water. Finely chop the Mioorto chives. Drain the pasta, reserving a little of the cooking water, then toss it with the celery pesto, adding some of the reserved water if needed to loosen the sauce.
Serve topped with the chopped chives and a sprinkle of crushed toasted hazelnuts.
Tips and combinations
Toast the hazelnuts in a dry pan for a couple of minutes before preparing the pesto to bring out their flavour. Just before serving, finish the dish with a little freshly grated lemon zest: its bright citrus notes perfectly balance the richness of the hazelnuts and complement the fresh aroma of the chives.
