Creamy Broccoli Soup

Creamy Broccoli Soup with Mioorto Soffritto and Rosemary: the perfect solution for a light yet flavourful meal. The secret base is Mioorto Soffritto, ready to bring all the taste of traditional cooking to your table while saving time in the kitchen.

Ingredients

For the soup
600 g broccoli
1 medium potato
Mioorto Soffritto
Vegetable stock
Extra virgin olive oil
Salt and black pepper, to taste
Parmigiano Reggiano cheese

For the croutons
3–4 slices of bread
1 sprig of Mioorto Rosemary
1 garlic clove
Extra virgin olive oil

Procedure

Wash the broccoli and cut it into small pieces. Peel the potato and dice it into small cubes. In a saucepan, heat the Mioorto Soffritto with a drizzle of extra virgin olive oil, then add the potatoes and broccoli and cook briefly, stirring to enhance the flavours.
Cover with hot vegetable stock, season with salt, and cook for 15–20 minutes. Meanwhile, prepare the croutons by toasting diced bread in a pan with olive oil, garlic, and rosemary until golden and crisp.
Blend the vegetables until smooth and creamy. Adjust the consistency with a little vegetable stock, then finish with Parmigiano Reggiano and a drizzle of extra virgin olive oil.
Tips and combinations
To keep the soup a vibrant green colour, blanch the broccoli in boiling water for 2 minutes and transfer it to an ice bath before adding it to the potatoes and stock. Alternatively, avoid covering the pot with a lid while cooking.
