Pasta with Swiss Chard & Croutons

Pasta with Swiss Chard & Sage Croutons with Mioorto Sage: a dish where the natural sweetness of Swiss chard meets the spicy kick of chilli. The recipe is given extra character by homemade bread croutons, toasted in a pan with our hand-chopped Mioorto Sage, releasing a balsamic and enveloping aroma.

Ingredients

Short pasta
Fresh Swiss chard
Mioorto Sage
Country bread
Fresh chilli pepper
Garlic (optional)
Extra virgin olive oil
Salt, to taste

Procedure

Cut the bread into cubes and toast it in a pan with extra virgin olive oil, chilli, and chopped sage until golden and crisp.
Separate the stems and leaves of the Swiss chard. Cook the stems together with the pasta in boiling water, while sautéing the leaves in a pan with olive oil and garlic.
Drain everything and combine in the pan, mixing well. Serve topped with the crispy sage croutons and freshly chopped chilli.
Tips and combinations
Finish the dish with a little freshly grated lemon zest. The lemon’s acidity enhances the earthy flavour of the Swiss chard and balances the richness of the sage croutons, creating a beautifully harmonious dish.
