Spinach flan

Ingredients

Mioorto Spinach
Eggs
Grated cheese
Extra virgin olive oil
Salt and pepper
Nutmeg
Scamorza cream

Procedure

Cook the Mioorto Spinach in a saucepan over a low heat with a drizzle of oil and a pinch of salt, then chop with a knife. Pour into a bowl along with 4 eggs, the grated cheese, salt, pepper, nutmeg and mix until the mixture is even. Brush some moulds with oil and fill with the prepared mixture. Cook in the oven at 180° for approximately 25 minutes. In the meanwhile, prepare the scamorza cream in a saucepan. Once ready, remove from the oven and garnish with the scamorza cream.
