Ravioli with snow peas, broad beans, almonds and Mioorto Rocket are an unusual first course that will delight from the first bite. Blanch the fresh broad beans, drain, wait for them to cool and remove the skin. Top and tail the snow peas, remove the thread, wash and chop. Bring the water to a boil, salt and add the snow peas. After a few minutes (depending on the cooking time of your chosen ravioli), add the ravioli to the same water and cook. Drain, add the almonds, broad beans, salt, black pepper, extra virgin olive oil and some Mioorto rocket leaves.
