In a bowl, combine the flour, yeast, a teaspoon of sugar, a pinch of salt and extra virgin olive oil. Knead thoroughly until smooth and elastic. Leave to rise for about two hours. Once the dough has doubled in size, spread it onto a lightly oiled baking tray. Bake in a preheated oven at 200°C for approximately 30 minutes. When the focaccia is golden, remove from the oven and top with crescenza cheese and Mioorto rocket.
