Mioorto Spinach
Procedure
First cut the aubergines into thin slices, cover with coarse salt and leave to rest for approximately an hour to remove any bitter taste. Then rinse and dry well. Dip each slice into the beaten egg then the flour and then fry in plenty of peanut oil. Meanwhile, sauté the Mioorto Spinach in a frying pan with a drizzle of oil for a few minutes. Serve the fried aubergines with the spinach and your favourite sauces and cheeses.
